I stopped by a farmer’s market in Oak Lawn (Dallas) picked up some locally-made BBQ sauce and came up with this Southwestern Spaghetti recipe. The tomatoes and onions also came from the market. Most everything from this recipe came from the local farmer’s market.
- One medium onion
- One clove of garlic
- One package of sliced button mushrooms
- Olive Oil
- Dry white wine
- ¾ jar of BBQ sauce
- Three medium tomatoes
- Spaghetti (it’s nice to use half regular and half whole grain).
In large saucepan cook onions in white wine and oil for ten minutes or so. Add garlic, then tomatoes. Cook for ten minutes adding wine as needed. Add BBQ sauce and cook for 5-10 minutes. Mix in enough spaghetti for two. Add parmesan cheese if desired.
